a curious bird is the pelican...
There are culinary moments that simply take over, and I suppose that what has become the annual ritual of the Christmas cake is one of those. Several weeks ago, we found the largest bowl in the house, and added all the mixed fruit of various persuasions we could find. Into this we then emptied in all the odd bottles of hooch that seemed to have accumulated after a year or so on tour in Europe.Today I finally girded my loins and started the cake, if Iwas to point out that the cake contains among its ingredients; four pounds of fruit, six eggs, a pound of flour and 12 ounces each of butter and sugar, you will appreciate that this is quite a hardcore piece of baking. Not for the first time I was wishing for a small cement mixer, as I added the fruit to the cake batter and began to realise that the bowl was never going to be big enough. Thankfully it is a very stiff mixture and the act of folding in the fruit was enough to prevent a tsunami of cake mixture. Sadly, I still have half a bowl of hooch sodden fruit left, so I am going to have to repeat the whole episode again.
I realise that I have left them rather late this year, but no matter, we were still eating last years in June.
